Chicken and Cashew Stir Fry

“Good food fast, this is quick and easy one-pan cooking at its tastiest!”

Ingredients
Serves 3-4

•    2-3 chicken fillets, sliced into pencil thin strips
•    2 cloves of garlic, sliced
•    1 piece fresh ginger, sliced
•    1 tbsp soy sauce
•    3 tbsp sesame oil
•    1 red pepper, sliced
•    1 green pepper, sliced
•    1 bunch spring onions, sliced diagonally
•    115g (4 oz) mushrooms, sliced
•    225g (8 oz) cooked noodles
•    85g (3 oz) cashew nuts
•    Seasoning


Method


Place the chicken into a basin and add the garlic and ginger.  Stir in the soy sauce and leave to marinate in the refrigerator.

2,3 and 4 oven AGA:
Heat the AGA wok and then add the sesame oil.  When the oil is hot add the chicken and stir-fry for a minute.  Then add the peppers and onion, stir-fry for 2 minutes.  Add the mushrooms, noodles and cashew nuts and stir-fry for a further minute, or until all is hot.

Season and serve at once.
