| Baked Sweet Potatoes |

Sweet potatoes make a change from jacket potatoes. They cook quicker and their orange flesh is attractive to the eye. Sweet potatoes are native to tropical South America but are now being grown commercially in the UK, as well as in gardens and allotments in milder areas. Serve topped with crème fraîche and chives as a colourful accompaniment to grilled meats.

Method
Scrub the sweet potatoes and prick with a fork. 2, 3 and 4 oven AGA: Cook on the grid shelf set on the lowest set of runners in the roasting oven for 25-35 minutes, until soft. Cut a cross in the top of each cooked sweet potato and insert a dollop of crème fraîche and snip over a scattering of chives. Conventional cooking: Bake at 200°C (400°F), fan oven 180ºC, Gas Mark 6 for 25-30 minutes.
